A couple weeks ago, my friend, Corrine, had me try a Vegan Tapioca Pudding topped with mango puree. The ingredients said it was made with coconut milk which was perfect because I had coconut milk that I didn’t know what to do with. I came across a recipe that is NOT vegan but just as good. This recipe uses coconut milk and eggs. Unfortunately when I went to the Asian market, they did not have mangos! I know, right??
Well it was still delicious without the mango and I will definitely try to make it again with the mango!
